Zucchini “Pasta” Salad

A tasty and nutritious gluten-free, grain-free pasta option.

Step 1
Finely shred or julienne-sliced strips of zucchini.

Step 2
Add cherry tomatoes, Parmesan and/or other cheese, extra-virgin olive oil, crushed or chopped garlic, basil, oregano and salt.

  • 4 cups zucchini, cut julienne style or shredded
  • 1 cup cherry tomatoes
  • ½ cup Parmesan cheese
  • 1 tbs extra-virgin olive oil
  • 2 cloves garlic, crushed or chopped
  • 1 tbs fresh basil
  • 1 tsp oregano
  • ½ tsp sea salt
