This stew is a tasty and easy way to combine ground beef with an array of veggies.

Step 1
Cook ground beef in skillet until almost done. Add chopped zucchini, tomatoes, carrots, onions, spinach, green beans, garlic and other vegetables. Continue cooking.

Step 2
Add homemade stock or more tomato sauce, salt and other seasonings. Option: Add sour cream.

  • 1 pound grass-fed natural ground beef
  • 2 cups zucchini, chopped
  • 2 cups tomatoes, chopped
  • 2 cups carrots, diced
  • 1 medium onion, chopped
  • 2 cups spinach, chopped
  • 2 cups green beans, chopped 1” length
  • 4 cloves garlic, minced
  • 2-3 cups beef or chicken stock
