Coconut oils are one of the healthiest fat sources around. Combined with shrimp and curry, they make a delicious dinner.

Step 1
Heat skillet with coconut oil and quickly sauté grated garlic and ginger with shrimp. Remove from pan and sauté carrots and broccoli.

Step 2
Add unsweetened coconut milk with a small amount of broth as needed and continue heating. Add shrimp mixture, curry and salt to taste. Top with chopped cilantro.

  • 1 pound shrimp
  • 1 cup unsweetened coconut milk
  • 1 tbs coconut oil
  • 4 cloves garlic, grated
  • 3 tbs ginger, grated
  • 2 cups carrots, sliced diagonal
  • 1 cup broccoli, chopped
  • ¼ cup cilantro, chopped
  • 1-2 tsp curry powder
  • Sea salt to taste
  • Serve with a side salad.
