Another great zucchini and egg breakfast combo.
Step 1
Sauté grated zucchini with generous amount of ghee or butter. Beat eggs and pour over zucchini.
Step 2
Sprinkle cheese on top, cover and lower temperature for a slow cook. Flip the frittata or broil in oven to finish cooking top layer.

- 1 small zucchini, grated
- 2 eggs, beaten
- ¼ cup mozzarella or Parmesan cheese, grated
- 1-2 tbs butter or ghee
- Dash of sea salt to taste
