Lamb roast makes for a soft, spicy, delicious dinner.
Step 1
In the morning, place lamb in crock pot, salt generously, cook for several hours on low. Add onions, carrots and celery halfway through (or in the morning if you’re gone all day).
Step 2
Mix sour cream, lemon, salt and chopped mint. Blend into shredded cucumber. Use as sauce for lamb and vegetables.

- 1 3-5 pound lamb roast
- 1 large onion, diced or sliced into eighths
- 4 medium carrots, sliced thickly
- 3 stalks celery, sliced thickly
- 1 cup sour cream
- 1 cucumber, shredded
- 1 tbs chopped mint
- Juice from ½ lemon
- Sea salt to taste
