The spiciness of arugula, combined with the soft flavors of shrimp, makes this a provocative and unique starter dish.
Cook and cool wild shrimp (or cook extra the night before and save). Wash arugula, and wash and slice avocados and cucumber.
Place arugula on plate or shallow bowl. Arrange cucumbers and avocado around and shrimp on top. Dress with raw sesame oil, apple-cider vinegar and ground sesame seeds.

- 4 cups or more arugula
- 1 avocado, sliced
- 1 cucumber, sliced
- 4 tsp raw sesame oil
- 2 tsp apple-cider vinegar
- 4 tbs ground sesame seeds
