Broccoli carries exorbitant amounts of vitamin C as well as being high in fiber and certain anti-cancer compounds. Combined with the many fat-soluble vitamins found in eggs, it makes for a delicious, low-carb, and healthy option.
Steam broccoli in a covered skillet and small amount of water. Add butter, salt and eggs.
Return lid and cook until eggs are softly cooked. Top with grated cheese.
