A great stew combining soft and strong flavors, as well as containing an array of vitamins and protein.
Brown fresh ground beef. Add chopped onions, ginger and garlic. Let cook then add steamed or roasted butternut squash.
Add stock and salt to taste. (Cooking butternut squash beforehand makes this a fast meal to prepare—steam 1-inch chunks or roast entire squash at 350 degrees for one hour.)

- 1 pounds grass-fed natural ground beef
- 1 medium butternut squash, cubed and cooked (roasted or steamed)
- 2 cups beef or chicken stock
- 1 medium onion, chopped
- 4 cloves garlic
- 2 tbs ginger, grated
- 1-2 tsp sea salt
- Serve with a side salad.
