Butternut Ginger Beef Stew

A great stew combining soft and strong flavors, as well as containing an array of vitamins and protein.

Step 1
Brown fresh ground beef. Add chopped onions, ginger and garlic. Let cook then add steamed or roasted butternut squash.

Step 2
Add stock and salt to taste. (Cooking butternut squash beforehand makes this a fast meal to prepare—steam 1-inch chunks or roast entire squash at 350 degrees for one hour.)

Prep: 15 minutes
Cooking: 30+ minutes

  • 1 pounds grass-fed natural ground beef
  • 1 medium butternut squash, cubed and cooked (roasted or steamed)
  • 2 cups beef or chicken stock
  • 1 medium onion, chopped
  • 4 cloves garlic
  • 2 tbs ginger, grated
  • 1-2 tsp sea salt
  • Serve with a side salad.
