Carrot Salad with Walnuts

The pigment in carrots is full of the nutrient beta-carotene, which turns into vitamin A inside our bodies. Reap the many health benefits of carrot with this delicious, multicolored salad!

Step 1
Combine grated carrots, finely chopped celery, fine strips of red pepper and walnuts.

Step 2
Combine with a mixture of sour cream and extra-virgin olive oil, and salt.

  • 2 cups carrots, grated
  • 1 cup celery, chopped fine
  • ½ cup red pepper, sliced in thin strips
  • ½ cup walnuts
  • ¼ cup sour cream
  • 1 tbs extra-virgin olive oil
  • ¼ tsp sea salt
