Step 1
Dice onions, red peppers, mushrooms and sauté in ghee, butter or other fat.
Step 2
Add eggs and mix well.Add cheese, fold over and cook until done. Top with sour cream and/or tomatoes.

- 1 red pepper, diced
- 4 medium mushrooms, sliced
- 1 tbs butter or ghee
- 4 eggs
