Mache Salad with Beets and Feta

This light, tasty salad is a veritable cocktail of vitamins and minerals, particularly Vitamin B. The addition of goat cheese makes this a great option for those who don't do well with other cheeses.

Step 1
Mix together raw mache greens with diced cooked beets.

Step 2
Top with extra-virgin olive oil, crumbled feta cheese and salt.

  • 4 cups mache
  • 1 cup beets, cooked and diced
  • ½ cup feta cheese crumbles
  • 1 tbs extra-virgin olive oil
  • ½ tsp sea salt
