Poached Wild Salmon

Salmon, with its delicious flavor and its incredible array of omega-3 fatty acids, is an excellent dinner any day. Try it out in this spicy, zesty format for a delicious, healthy treat.

Step 1
In the morning, use a stovetop pan with a lid to marinate two to four salmon filets with juice of one lemon. Top with slices of lemon, crushed garlic and salt. Cover and refrigerate.

Step 2
In same pan as fish, add fresh spinach and butter or ghee. With lid on, steam salmon and spinach until lightly done (fish turns pale orange and and has a soft center). Top with fresh dill.

Step 3
Serve with a side salad.

  • 2 4-oz. wild salmon filets
  • 2 lemons, one juiced, one sliced
  • 2 cloves crushed garlic
  • Sea salt to taste
  • 3 cups fresh spinach
  • 1 tbs butter or ghee
  • 1 tsp fresh dill
