Pork Roast with Seasonal Vegetables

A healthy, low-carb, and delicious dinner.

Step 1
Place roast in a crock pot, salt generously, cook on high until meat is done.

Step 2
Serve with butternut or other winter squash and or seasonal vegetables cooked with butter or ghee. (Save fat from roast for use in frying.)

Step 3
Serve with a side salad

Serves: 6-8
Prep: 10 minutes
Cooking: 8 hours

  • 3-4 pound pork roast
  • 6 cups cooked winter squash or other seasonal vegetables
  • Butter or ghee
  • Sea salt

    There’s no way you can get a crispy outside to that roast by heating it in the crockpot. Was this roast then crispified under broil?
