Like chicken, duck makes for a delicious meal and is an excellent source of protein. Try it out in this simple recipe that really brings out its flavors!
Step 1
Place whole duck in a crock pot, salt generously, cook on high until done (meat will easily separate from bone). Brown in a hot oven, skin-side up, just before serving.
Step 2
Lightly sauté onions in ghee or butter. Add spinach at the end and cover to steam.
(Duck bones and other unused pieces also make a great stock—simmer in water 8-12 hours and strain.)
Step 3
Serve with a side salad.
