Enjoy zucchini and eggs in this tasty, easy-to-make breakfast dish.
Step 1
Sauté thinly sliced zucchini strips in skillet. Add diced tomatoes, chopped basil and grated garlic.
Step 2
When almost cooked, add egg and mozzarella cheese. Cover and cook on low until desired doneness.

- 1 medium zucchini
- ½ cup diced tomatoes
- 2 tbs fresh basil, chopped
- 1 clove garlic, grated
- ½ cup mozzarella, grated
